To prepare our Chili Lime Pineapple Soda, add the first 3 ingredients to a cocktail shaker with ice, shake, and strain into a glass. Top with club soda, and garnish with a pineapple or lime wedge.

Ingredients
3 zucchini
11/4 cup olive oil
3 tbsp maple syrup
2 tbsp soy sauce
2 tbsp balsamic vinegar
1 tsp PSC smoked paprika
½ tsp PSC granulated garlic

To prepare our Zucchini Jerky, slice the zucchini lengthwise and lay in a wide baking tin. Mix the oil, maple syrup, soy sauce, balsamic vinegar, paprika, and garlic together and pour over the zucchini. Coat evenly. Marinate in the refrigerator for at least 2 hrs. Preheat the oven on its lowest setting. Line 2 large baking sheets with parchment paper and place a baking rack over the top, lay each zucchini slice side by side on the racks. Dust with PSC Chili Lime Seasoning. Place trays in the oven and cook for 6-8 hours until veggies are dry and crisp.

To make the Pan Roasted Salmon, heat safflower oil in a large, iron skillet. Once oil is hot, add the salmon filet skin-side down. Baste the salmon for 4-5 minutes, then flip and cook for one minute. Remove from heat. On a large plate, add a mound of tropical salad, top with salmon, and drizzle with jalapeno cilantro crema. Finally, garnish with micro radish greens and serve!
