Our Vegetable Jerky is both vegetarian and vegan-friendly, and we’re confident this recipe will even satiate the meat eaters in your life. Just like traditional jerky, our recipe does not need to be refrigerated, and can be easily packed, stored, and enjoyed on the road or on your next backpacking trip. Featuring a choice of three of our versatile spices, this jerky recipe calls for either:

  • PSC Jerk Seasoning for eggplant
  • PSC Chili Lime Seasoning for zucchini
  • PSC Louisiana Cajun Seasoning for carrots.

Ingredients

2 medium eggplant OR 3 zucchini OR 3 carrots

1/4 cup olive oil

3 tbsp maple syrup

2 tbsp soy sauce

2 tbsp balsamic vinegar

1 tsp PSC smoked paprika

1/2 tsp PSC granulated garlic.

Your choice of seasoning

Steps

  1. Prepare your choice of vegetables by thinly slicing lengthwise. Use a mandoline to cut thin, even slices.
  2. Spread vegetables in a wide baking tin (with shallow edges that can hold a marinade)
  3. Prepare marinade in a small bowl by mixing together the oil, maple syrup, soy sauce, vinegar, PSC smoked paprika, and PSC granulated garlic.
  4. Pour marinade over the vegetables in the tin and shake carefully, ensuring vegetables are completely coated. Leave to marinate in the refrigerator for at least 2 hours.
  5. Preheat the oven by setting it to its lowest temperature setting. Line 2 large baking sheets with parchment paper and place a baking rack over the top.
  6. Carefully remove vegetables from the marinade and lay each piece side by side on the racks without overlapping.
  7. Choose from the list of seasonings above and dust the seasoning over your vegetables.
  8. Place the trays in the oven and cook for 6-8 hours or until the vegetables are dry and crisp.
