1 tbsp olive oil
8 oz baby bella mushrooms, diced
½ cup carrots, diced
½ cup celery, diced
1 red bell pepper, diced
¼ cup leeks or green onions, diced
9 oz Soyrizo

12-14 cups cubed, dried bread (from about 1.5 loaves)

Steps
Step 1: Sauté the Vegetables and Soyrizo
