At this year’s IFT FIRST Expo, we served roasted corn ribs seasoned three distinct ways — each one designed to highlight the versatility and performance of PSC signature blends in a simple, real-world application.

From citrusy crema to smoky aioli to tangy, umami-forward dips, these applications show how a single seasoning blend can deliver bold, repeatable results with minimal labor. Whether you’re developing retail-ready meals, center-of-plate proteins, deli offerings, or snack accompaniments, these flavor builds demonstrate how PSC blends can stretch across multiple categories while remaining cost-effective and operationally efficient.

Base Recipe: Corn Ribs

Servings: 4

Ingredients:

  • 2–3 ears of corn, husked
  • 1–2 tbsp olive oil
  • Salt, to taste

Instructions:

  1. Preheat oven to 425°F.
  2. Cut each cob lengthwise into quarters (carefully!) to create “ribs.”
  3. Brush lightly with olive oil and sprinkle with salt.
  4. Roast on a sheet tray for 20–25 minutes, until the edges curl and corn is golden.
  5. Remove from oven and while warm, drizzle or brush with your seasoned topping of choice. Finish with listed garnishes.

 

 

Elote Style — PSC Elote Seasoning

Inspired by Mexican street corn, this chili-lime blend brings creamy tang and just the right amount of depth.

Topping:

  • ½ cup sour cream or Mexican crema
  • 1 tsp PSC Elote Seasoning
  • Garnish: Cotija, lime zest, chopped cilantro

Application Ideas: Drizzled on roasted corn, folded into a grain bowl, layered into wraps, or served as a chip dip.

 

Sweet Heat — PSC Smokin’ Heat & Sweet

This chipotle-honey blend builds a smoky-sweet aioli that punches above its weight.

Topping:

  • ½ cup mayonnaise
  • 1 tsp PSC Smokin’ Heat & Sweet Seasoning
  • Garnish: Chopped scallions 

Application Ideas: Great for sliders, flatbreads, veggie bowls, or drizzled over grilled items for an instant flavor boost.

 

All Dressed — PSC All Dressed Seasoning

A tangy, savory nod to the iconic chip flavor, turned into a layered, umami-rich dip.

Topping:

  • ¼ cup mayo + ¼ cup sour cream
  • 1 tsp PSC All Dressed Seasoning
  • Garnish: Pickled red onion

Application Ideas: Try it with roasted vegetables, blended into burger builds, or as a layered spread for wraps and sandwiches.
